chocolate coconut granola

Today, was Avery’s first day of daycare.

Granted it was only for 90 minutes, but I feel like her babyhood is slipping away.

I thought I would be fine, and for the most part I was. Before I left the house this morning, my husband asked if I was okay, and I started to cry.

I didn’t let him see that I was holding back the tears. I know she’ll be fine, I know that she will love it, and she will make a ton of new little friends. But it makes me realize she’s not a baby anymore.

She sleeps through the night, she doesn’t really enjoy having a bottle, and she’s almost walking.

Trust me, I’m not ready or willing to have another baby yet. I enjoy wine and being thin. It’s just a chapter of our lives is closing and another one is beginning.

Now, let’s have some chocolate granola.

Chocolate coconut granola

4 cups old-fashioned oats

1 cup large flake, unsweetened coconut

1/4 cup dark brown sugar

1/3 cup cocoa powder

1/2 cup unsalted butter

1 teaspoon vanilla

pinch salt

Preheat oven to 350 degrees.

In a large bowl, combine the oats and coconut, set aside. In a small sauce pan over medium-low heat, combine brown sugar, cocoa powder and butter. Whisking occasionally, let butter melt then remove from heat. Add vanilla and salt, stir well to combine. Pour the chocolate mixture over the oats, toss really well to combine. I find hands work the best for tossing. Make sure all the oats and coconut have been coated with chocolate.

Pour the mixture on to a large baking sheet. Make sure the oats are in an even, single layer. Bake for 25 minutes, stirring/tossing frequently to prevent burning. Remove from oven and let cool completely before serving.

Can be stored in an airtight container, in the fridge, for up to 10 days.

  1. Awwww she’s still a little baby! Just not as itty bitty. But I know what you mean. Although I don’t have kids, I do have issues with change, even though it’s sometimes good it’s always bittersweet.

    PS – I love that you used cocoa in this granola instead of chocolate chips, because when I have chocolate chips in granola I always pick them out and eat only the chips, leaving the granola, like a child.

    Thanks for sharing! This post put tears in my eyes…sappy Mom. Haha. My little girl has been in daycare a month now and is walking. It’s sad to see babyhood pass, but so cool to see them walk! Haha and I’m with you…I enjoy whiskey and being thin too much to have another babe just yet. You’re recipes are great…I’m excited to try this one…I know my baby girl will love it too! Cheers!
