Life is busy.

I get it. Oh boy, do I get it.

I have a problem with the word busy. It’s overused. Everyone and their dog is busy. Rush, rush, rush, go, go, go. I think that some people are busy, but most people are taking the word for granted.

I’m abolishing it from my vocabulary.

I’m not longer busy. I don’t have time for things because I’m being EFFICIENT.

Or inefficient. Or lazy.

All of the above?

For all those too busy  being so EFFICIENT at life to make dinner.

GARLIC. BREAD. PIZZA.

Take one store bought (or homemade, no judgements) garlic loaf, add topping of your choice, add salad, BAM efficient dinner time yums.

Garlic Bread Pizza

1 loaf prepared garlic bread, unbaked

various toppings, I used tomato slices, fresh basil, and chilli pepper flakes

1/2 cup grated mozzarella cheese

Preheat oven to 400 degrees. On a standard baking sheet, open the garlic bread so the buttered side is facing upwards. Spread the garlic butter so it covers the entire top of the loaf. I do this because it always comes as a giant butter lump in the middle, spread that good stuff out. Sprinkle / layer with various toppings, beginning and ending with cheese. Bake for 10 – 15 minutes until cheese is melted and loaf looks toasty. Broil on HI for 2 – 3 minutes just to get that dark, brown crust on the cheese. Let rest for a few minutes before slicing with a serrated knife and serve.

  1. What an interesting way to spice up garlic bread! Or is it the pizza that you were jazzing up? Either way delicious idea!

  2. When we were up in your beautiful homeland a couple of years ago, we could some frozen garlic bread that happened to be vegan and we lived off of it for like a week. I can’t wait to find some here and start doing this. I need it, seeing as how I am too efficient in other areas to have a decent dinner half the time :)
